If The Classic is the equivalent of the American hamburger, then The Hiroshimajin is the equivalent of the cheeseburger. Known as one of the most popular dishes in Hiroshima, this dish includes ikaten (A popular food of Hiroshima) inside of the okonomiyaki and is topped off with green onions.

HIROSHIMA STYLE TSUKEMEN / TANTANMEN
Hiroshima Tsukemen (Cold Dipping Noodles)
If okonomiyaki were the hearty big brother of the Chinchikurin food family, then tsukumen would be the studious, unsuspecting younger brother with a hidden fiery side!
Hiroshima style tsukumen is a noodle dipping sauce dish. One dish is the well-to-do side that contains sliced spinach, cabbage, tomatoes, a sprinkling of alfalfa sprouts, noodles, and grilled beef that’s been marinated in Chinchikurin’s special marinade. The second dish, on the other hand, has a flavorful bonito and shoyu (Katsuojyoyu) based dipping sauce that’s topped with sesame seeds…
and a whole lot of spice!
Soupless Spicy Tan Tan Men (Soupless Spicy noodles)
Chinchikurin is bringing a whole new bowl of noodles to the table with this dish. Not to be confused with the spicy tantan ramen, the Hiroshima style TanTanMen is a soupless noodle dish that is slightly spicy and contains sansho.
This dish contains a hearty portion of noodles topped with ground pork, negi, and a sprinkle of togarashi. The special Chinchikurin mixing broth contains a variety of oil and spices, including sansho.
There is a Hiroshima custom in eating this dish. First, mix the various ingredients at least 30 times. Feel free to add additional sansho as needed to your preference, then scarf it all down! Once all the noodles are gone, add rice to the remaining mixture and enjoy the rest of remaining ingredients!
